Serves 4
Ingredients
- small pineapple, 1
- kiwi fruit, 2
- ripe mango, 1
- watermelon, 1 slice
- peaches, 2
- bananas, 2
- tropical fruit juice, 60ml/4 tbsp
How to:
- Slice the base and top off the pineapple. Stand upright. Cut away the skin by 'sawing' down. Using the tip of a small, sharp knife, cut out the 'eyes' (dark round pieces). Cut the pineapple in half lengthways, the cut out the core. Chop into bitesize pieces. Put them in a bowl.
- Use a vegetable peeler to remove the skin from the kiwi. Cut in half lengthways, then into wedges. Add to the bowl.
- Peel the mango with the peeler, then stand on a board and cut down to create slices. Cut these into smaller pieces.
- Cut the watermelon into slices, then cut off the skin; discard. Cut the flesh into chunks, then remove the seeds.
- Cut the peaches in half, remove the stones and cut into wedges. Peel then slice the bananas.
- Add all the fruit to the bowl and gently stir in the fruit juice. Cover tightly with clear film and chill in the refrigerator for half an hour before serving. To transport, pack into a sealable plastic container.
