Ingredients
- pizza dough mix, 1 packet.
- ricotta cheese, 115g/4oz/0.5 cup
- freshly grated Parmesan cheese 30ml/2 tbsp
- egg yolk, 1
- chopped fresh basil, 30ml/2 tbsp
- salt and ground black pepper.
- mozzarella cheese, 75g/3oz, cut into small cubes
- cooked ham, 75g/3oz, finely chopped
- olive oil, for brushing.
How to:
- Preheat the oven to 220˚C/425˚F/Gas 7. Lightly oil two non-stick
- Make the dough according to the packet instructions. Knead briefly until smooth on a lightly floured surface, then shape into a ball.
- Divide the dough in half and place on a floured surface. Using a rolling pin, roll out each piece to an 18cm/7in round.
- Mix together the ricotta and Parmesan cheeses, egg yolk, basil, salt and pepper in a large bowl with a spoon.
- Spread the cheese mixture over half of each round, leaving a 2.5cm/1in border. Sprinkle the mozzarella and ham on top.
- Brush the edges of the dough with water and fold the uncovered dough over the filling.
- Press the edges to seal. Carefully lift on to baking sheets. Brush with oil and make a small hole on top of each. Bake for 15-20 minutes, until golden.
- Remove the calzone from the oven and lift it onto a wire rack with a palette knife. Serve warm or leave until cold and wrap in clear film to transport.
